Massage Monday 1-7-13: Massage your greens – Raw massaged Kale salad recipe

Happy New Year! Hope the New Year is treating you well so far. I’m not going to massage a human being today. Instead I’m going to massage my greens. Over the holidays I was absolutely hooked on this simple raw dish. I’m sure healthy diet is on many people’s mind at the beginning of the year. Today I’m going to share this healthy recipe to start off the New Year in and you also get to practice squeezing.

Wash and tear a bunch of kale into bite-size pieces.

Chop several garlic cloves. Squeeze half a lemon.

Add olive oil, soy sauce, minced garlic, salt, and pepper. Add parmesan cheese if you are not vegan, or nutritional yeast if you are vegan.

Massage by firmly squeezing them for about 1-2 minutes until the kale becomes tender and shiny, and the volume is reduce to about half. Oh and don’t forget to add the lemon juice. Massage some more. I also added some dried cranberries and chopped walnuts to make it festive.
